Minted Couscous Recipe
When this couscous hits your mouth, you’ll probably think that those green peas are delivering that minty favor. This recipe is from the Everything Lactose-Free Cookbook.
- 1 1/4 C water
- 2 tsp. minced fresh mint
- 1 tsp. chicken bouillon granules
- 1/8 tsp sea salt
- 1 C couscous, uncooked
- 3/4 C frozen peas, thawed
- Fresh mint sprigs (optional)
Combine water, fresh mint, bouillon granules, and salt in a medium saucepan. Bring to a boil. Remove from heat. Add couscous and peas. Cover and let stand until liquid is absorbed and couscous is tender, about 5 minutes. Fluff couscous with a fork. Transfer from saucepan to a serving bowl. Garnish with fresh mint springs, if desired.
