Strawberry Spinach Salad Recipe
The flavor of fresh dill and strawberries mingled together is quite an adventure for your taste buds! This salad spells summer and is great served for a special lunch or dinner. You can serve it as a side or as an entree. This recipe is from the book The Everything Lactose-Free Cookbook.
- 6 C fresh spinach
- 1 tsp toasted sesame seeds
- 2 C fresh strawberries
- 1/4 C olive oil
- 2 Tbsp. red wine vinegar
- 1 1/2 Tbsp. sugar
- 1 1/2 tsp. minced fresh dill
- 1/8 tsp. onion powder
- 1/8 tsp. garlic powder
- 1/8 tsp. dry mustard
- 1/8 tsp sea salt (optional)
Wash the spinach and remove stems and heavy veins. Tear into bite-sized pieces. Place spinach in a large bowl. Sprinkly with the toasted sesame seeds. Cut strawberries into halves or quarters. Add strawberries to the spinach. In a screw top jar, combine the remaining ingredients. Shake until well mixed. Chill. Shake the dressing again and pour over spinach mixture. Toss gently. Garnish with a whole strawberry.
